Smallanthus sonchifolius - A hardy perennial vegetable, that produces edible tubers. Full sun to part shade. 1.5 metres height. Yacon is a close relative of the sunflower and Jerusalem artichoke. Edible tubers are harvested and crown is left to re grow and produce more crops. Aerial parts of the plant are frost sensitive, but underground crown will reshoot in the spring. A fast growing plant, that is easy to grow. Harvested roots can be eaten straight away or stored for later use. Tubers are low in calories and high in fibre. Yacon has a crunchy texture and can be eaten raw or cooked in a variety of ways. A medicinal tea can be made from the leaves. Requires a moist, deep, rich soil. Aerial parts of the plant make good animal forage.
